Skye Gyngell brings Spring to Somerset home, now open
Skye Gyngell’s very first solo endeavor, Spring, has become open. The restaurant brings Skye’s acclaimed ingredient-led cooking to your brand new Wing.
Skye and her staff are guided by the altering seasons, writing every day lunch and supper menus that present the greatest produce merely and memorably in the elegant nineteenth century drawing room, which will be was refurbished to its former glory. It will be the first-time your room has-been ready to accept the public for more than 150 years.
The light-flooded drawing-room, which seats 100 covers, is decorated simply and warmly allowing the large house windows, airy large ceilings and original cornicing to frame the area. Cloaked by Black Olive woods, an atrium garden sits enclosed at room’s centre with flora and fauna designs by recommended landscape designer Jinny Blom.
Various other collaborators from the task consist of artwork by Emma Peascod and Valeria Nascimento, all-natural oak floor by Danish brand name Dinesen, and interior decorating by Australian, Briony Fitzgerald. Spring's marketing and identity was developed by Studio Frith. Uniforms tend to be courtesy of famous manufacturers Egg and Trager Delaney, and mirror the restaurant’s effortless elegance.
The restaurant group is led by Senior Restaurant management Laurens-Jan Peters also Head Maitre’D Sarah Flyckt that has previously worked at London restaurants The Delaunay and The Wolseley. Overseeing Spring as Director of Operations is Skye’s long-lasting business lover, Marie Jackson.

The Salon at Spring
The Salon at Spring, an intimate trio of spaces right beside the key Spring dining area, starts on Friday 3 April.
The Salon at Spring will comprise of tree-lined tables at the front end of restaurant, a dining club, and an atrium garden, and certainly will offer a comfortable and airy eating area flowing from Spring’s entry to the heart associated with the restaurant.
Open up from 12.00-23.00, Monday to Saturday, and from 12.00-17.00 on Sundays, The Salon at Spring will not simply take bookings, thus motivating those working or living close by, or seeing Somerset home or the Strand to drop in for a short lunch, a post-work cocktail, or an earlier supper.
